Safety and quality of processed fruit and vegetables

The aim of the SQPOV research unit is to contribute to redesigning fruit and vegetable processing techniques with a view to ensuring sustainable food: for the improvement of nutritional quality, through processing treatments that are calculated as accurately as possible while respecting the microbiological safety of these products, and aiming at a total recovery of the biomass used.
